How I could handle working in a slower paced, non Agile work environment.

I spun the question around. Obviously all good Technical companies are Agile, and htey were letting me know they are not Agile and operate int he 1960's style of Waterfall. So I spun it to say that I had worked in both and explained the pros and cons of each.
