implement a key-value datastore that supports querying for historic values. For every key there can be multiple values at different timestamps, and it should support querying by a key only, or a key and timestamp.

It's essential to demonstrate that you can really go deep... there are plenty of followup questions and (sometimes tangential) angles to explore. There's a lot of Software Engineer experts who've worked at Instacart, who provide this sort of practice through mock interviews.
