The interview was fun and informative. I had three interviews. The ask about your wine and steal knowledge. They do require you to shave your beard and buy a tux minus the jacket. They give you one. There is a lot of table-side fire-oriented service you will be providing. I asked if servers are getting near 100k a year. They firmly said: no. Paid in commission. $1 hr base pay.
