Really easy and casual. I walked in with my resume for an application and asked for the manager. The "captain" of the store came over and asked me a few brief questions, then scheduled an interview for the next day. I was interviewed by a mate (someone still in management, but below the captain) and a crew member (the position I was applying for). It was a little more professional than my chat with the captain, but still pretty casual. I was asked standard interview questions about personal strengths, problem-solving, dealing with upset customers, etc. They called me back for a second interview a couple days later. This one was with the captain that I originally spoke to. Later that day he called to offer me the job.
