Applied via email to potential advisor. Had one phone interview, followed by an on-site interview with two faculty members under whom I would work. I also lived close (<15 miles away), which probably was the reason for this interview. At a second interview, after grant funding was confirmed, I was offered the position.
You will know once you go for the interview. Every advisor is different so there is no generalized process. Basically you have to do a Skype interview or if they are very impressed they will fly you in

Straight forward typical academic job interview. Standard 1 hr research presentation followed by discussions with current lab members and personal interview with PI. A lunch meet and dinner with grad students was geared towards a more informal discussion of life around Chapel Hill
