Pros
The restaurant worked like a finely tuned machine. And everyone treated one another with the utmost respect. It wasn't like that invisible barrier in most kitchens: the front of the house & back of the house. No, the front management could come to the kitchen and cook anything on that menu. I have a lot of respect for restaurants that operate like that

If you were extremely good at your job and knowledgeable within the kitchen, you could be called upon quite often. Some weeks I would work 80 plus hours
