Pros

You'll be treated scores better than most other bars, wage is fair, good opportunities for training and qualifications (cicerone, food hygiene certs etc). A plus side of Brewdog being a lot stricter than other bars: they tend to hire good people, so it's very rare you'll end up with a total waste of space on your team, and you'll generally be shot of them within 3 months. Customers are GENERALLY pretty nice, with some notable exceptions. You also get holiday hours and the occasional weekend off, which is pretty unheard of in most bars. Decent benefits as well, like free legal and medical advice on the company dollar, as well as crew treats etc. A lot more like having a proper job than working in a bar, but you're still ultimately working in a bar - even if it is a nice bar.

Cons

Depending on the bar/manager communication from management can be a bit ropey, and ops are often extremely slow to sign off on Rotas, so you could be sat on Thursday the 28th and have no idea what hours you'll be working week beginning 30th which is a joke. Penny pinching from HQ means hours can and will be cut dramatically, full time or part time this "living wage employer" couldn't care less if they have to hack their bar staff down to 10 hours a week to save on wage costs. Also wastage, minor repairs and breakages (any losses the bar makes) come directly from the staff's "Unicorn Fund" which is basically an end of year bonus - a bit of a kick in the teeth to lose a chunk of that (especially after having your hours slashed) on account of broken glasses and a few pints of wasted beer. They also make employees pay out of their own pockets to make up for lost profits if the till is down more than £4 - which is frankly absolutely disgusting, particularly on nights when your bar has taken in excess of £10k. The till is down £30 - all staff on close will have to fork up that money between them to cover it. No other bar I have worked in has had a policy like this. It is a joke, and a disgusting abuse of your staff to force them to pay out of pocket for the sake of a few mistakes. Staff who are made victims of con men and thieves also have to pay out of pocket to make up for money lost. Don't expect them to warn you beforehand, but they also won't pay you for your trial shift. My trial shift was only a couple of hours, but I'm aware of one employee who did their trial shift on a busy night, stayed till close (without being given the chance to go home or warned they'd be staying till close) had to pay for their own taxi, then was brought back for another trial shift. This employee worked about 10 hours for Brewdog with no pay, which I think is disgusting. "Interview process" or no, Jobseekers should not be taken advantage of for free labour in such a way. No other business I have worked for has been so ready to take money from its employees - and has not done so while plastering all over its branding that it is a living wage employer, oh so ethical and incredibly punk rock. I've also had managers who weren't very good with dealing with sexual harassment and threatening behaviour from customers. I've witnessed managers who have continued to serve very drunk customers who have been verbally abusive, as well as male customers who have made unwanted sexually aggressive comments toward female members of staff. I don't know why managers would prioritise milking a few extra quid from threatening/pervy customers over staff welfare and the comfort of other customers - doesn't make sense to me. Don't be taken in by the branding: Brewdog is extremely corporate, and without intervention from solid managerial staff, HQ will prioritise maximising profits over staff welfare in any way they can.
