You're going to be stuck in the kitchen cooking the whole time instead of being an "operations Manager". While you cook they also expect you to fulfill all manager duties to perfection. You cannot have a higher labor cost than 16% of the sales of the day, so somedays youre going to have 1 cook and 1 diswasher so get ready to do everything BUT manage during the week because with the sales during the week you can basically run no staff. You CANNOT do basically anything before your director approves, you cannot fire people basically before having to do a 57 step process. They have AOR's now (areas of responsibilities) Kitchen Manager and FOH manager basically but even if youre a FOH manager youre still going to cook everyday and open the whole kitchen by yourself during the week.
The 16% labor rule doesnt allow to have team members open and close the kitchen 7-3 regular 8 hour shift. You either have an opener or have a closer but you cant have both. They encourage to give adults with bills to pay 3 or 4 hours shift as cooks and sending them home with a total of 25 hours a week max basically after hiring people for a full time 40 hr per week position so turnover is terrible.
