Pros

Opportunities in DFW/Houston/San Antonio are huge at this time. It's a great concept that touches many service styles, the food is delicious and there are many fresh, healthy options so you can feel good about the product you are serving to guests. In store, there is very much a sense of family. If you are looking for growth and development, Pollo Tropical is a great career choice!!

Cons

Growing Pains in a Brand New Market. It takes some patience however, also builds resilience. Schedules for managers are rotating and adapting to changing shifts can be a challenge.

Pros

Competative compensation. Huge bonus potential (unachievable in stores open less than two or three years.) Huge number of tenured and life long employees in home base of Florida contribute to family first feeling

Cons

Outragious demands from middle management as far as hours and scheduling go. As a 10+ year food service manager I had the brand new experience of working multiple back to back 70 and 80 hour weeks. Poorly designed systems and procedures. Inventory loss and waste has less to do with running the systems and more to do with applying practical and common sense controls not specific to pollo. Recently had the VP of Operations comment at a conference about how every single one of her direct reports was in position less than 1 year. They tout internal promotions and growth but have a super low internal promotion rate of about %20. Cumbersome inventory management system. Labor standards that are not transparent at the unit level.
