Pros

stable environment; large scope projects

Cons

A little bit of a "we have always done it this way" environment; new processes or ways of thinking not always appreciated.

Pros

Cargill business is vast and fascinating. Coming in I thought it would be a fairly boring old business, set in it's ways and always trying to pinch another penny out of it's cost for what largely is a commodity-based business. Instead, I found it to be a very vast and diverse business that was quite interesting and exciting. The work culture was very engaging.

Cons

Like any large company. (Cargill is the largest privately-held company in the world) Cargill can be a bit of a monster with process and rules. There are many who can stop or delay in initiative and few who can make it happen. The culture is under a significant change (at least in IT) with the outsourcing of its' entire infrastructure to the India-based company TCS. This is a monstrous blow to the thing that Cargill had going for it...it's culture.
