Cons
Bad culture, bad communication, bad management of human resources. Terribly corporate. They go out of their way to refuse benefits such as 401k, health insurance, etc., by blaming the system ("the person hasn't gotten back to me!" for weeks and weeks of persistent follow-ups). They won't advocate for you as an individual. They won't offer support for career growth, extra training, etc. The company/restaurant is structured to resist change in an ever-changing industry. Also, there were many moments where I had to argue against the use of a specific racial slur by management both in staff meetings and in private. It was an ongoing conversation that I eventually gave up on. This is old school fine dining to its core, not just in its reverence of the glory days and sweaty polyester tuxedos.
