Great flexibility and peers to work with

Cons

The management is horrible at supporting their crew. They cut your budget down to help themselves get bonuses and throw you to the wolves when the client is upset and things being cut.

Pros

Can be a fun job, freedom to create your own menus.

Cons

Extremely tight budgets, hard to make “from scratch products”. Management is either nonexistent, or refuses to speak with you. Trying to get ahold of anyone is honestly a nightmare. Get better insurance. Period.

Get weekends off. Don't really have any other pros.

Cons

Senior management takes their time to respond to questions and concerns. (if they even respond) Benefits are horrible and have been for years. Don't really listen to employee concerns, unless it's something that's addressed by the house (even then, it's rarely told to employees.)
