Three interviews: First two with FOH manager or Keys, the third with the Managing Partner. The major areas they are looking for is how outgoing and competitive you are. They value up-selling so you will be expected to consistently asked customers to "load" potatoes/fries, "smother" their steaks. Furthermore, they are huge on customer service so be prepared to talk about the value of good service, "loving your people, etc. Also a new thing they do with interviews now is make the candidate do something embarrassing so be prepared.
