Along with her newly assembled team, Shannon takes a family-oriented approach when welcoming new associates and making the switch to Compass One.
Morrison Healthcare Chef Joseph Kraft is a Chicagoland native. He has been with the Morrison team since 2002 and has brought tons of experience with him. At Mayo Clinic in Arizona, Chef Joseph created a Mideastern-style vegetable stew that won an honorable mention in the Healthcare Without Harm Culinary Contest. "One of the biggest fears with our customers is that plant-based foods that create dishes are flavorless. This recipe breaks those barriers by using very strong aromatics, like cardamom, cinnamon, cumin, and saffron. Texture is very important to the dish. The addition of tofu, potatoes, and pistachios gives the dish different layers, including the crunch of the nuts in the dish." Chef Joseph explained.

At the University of Mississippi Medical Center, Chef Luke elevates every experience for the customer, patient, and even his own team. He has a keen eye for even the smallest of detail and is innovative both on and off the plate. A UVA Health team launched a food insecurity project that brings regular deliveries of fresh produce to pediatric patients and in-need families. The question, “What are you going to do in your community?” had been swirling in Dr. Jeffrey Gander’s mind ever since attending a pediatric conference more than two years ago. During the COVID-19 pandemic, the answer came to him. In November, the pediatric surgeon spearheaded the launch of a food insecurity project, which partners with Local Food Hub’s Fresh Farmacy to bring regular deliveries of fresh produce to pediatric patients and in-need families.
