Pros

Good job, or jobs, for those looking to work in restaurants for the first time. Lettuce being a massive restaurant group means that it has very corporate feel to the procedure and is a good litmus test to see if working in as restaurants is good for you. They do a good job training staff, specifically those in front of house, and thus allow those new to gain a good quick grasp off how the work is going to be. Also, just a good connection to have in the industry due to the size of the company and how many restaurants they have in Chicago.

Cons

The corporatized, assembly line structure, that works well for new people, can be a hinderance for those who have a long history of working in the industry. For those working as a barback, you with be working in both Ramen San, and the attached restaurant, Il Porcelino, which while good money, is massively stress full and your ability to handle it will depend on the level of the bartenders you are working with. This specific location is known for boon and bust cycles, and while it can be great on the boons, it is a struggle during the bust cycles, and you won't know which it is going through until you start working. Lower level managers are great, but the ones with the most power in the restaurant aren't , and one has very little experience being on the floor leading to issues between him and those on the floor.

Pros

The people are great, and second family. Food is good and abundant.

Cons

Stale ways of running a business. Too many cooks in the kitchen. Lots of hoops to jump through. Under compensated. Have to leave and come back to seemingly make more money

Pros

Competitive pay, bonus options, company discount and dining allowance, insurance. Great training program

Cons

Extremely long hours, not a whole lot of opportunity to advance after a certain level. No sense of appreciation or value. Partners are like ticking time bombs. Attitude of being easily dispensable.
