Very high server turnover High management turnover High kitchen staff turnover Terrible work atmosphere created by management and upper management 4 % tip out Approx a minimum of 25-55 minute ticket times on food orders If you sell a combo plate instead of fajitas you are ridiculed, so whatever you do make some of your guests order something they don't want so you can make the kitchen staff happy. make your customers order fajitas 90% of employees experience a written warning and or put on probation If a server makes a mistake you are ridiculed but if kitchen makes a mistake, The managing partner and his crew will never admit to wrong doing or acknowledge their mistake Make sure you tip the food runner also and when the kitchen manager starts cussing at you to run food you better stop everything you are doing and do it. Doesn't matter if you are entering an order on computer, Kitchen staff always short handed
